Jeanne's Crispy Potatoe Quiche

Ingredients

24 ounce thawed hash browns
1/3 cup butter, melted
1 cup hot pepper cheese, shredded
1 cup swiss cheese, shredded
1 cup diced, cooked ham
1/2 cup half & half
2 eggs
1/4 tsp seasoned salt

Directions

Press hashbrowns between paper towels to remove moisture.  Fit in a greased 10 inch pie plate, forming a solid crust.  Brush crust and top edges with butter.  Bake 25 minutes at 425 degrees.  Remove, sprinkle with cheese and ham.  Beat half & half, eggs and seasoned salt and pour over cheeses and ham.  Bake uncovered for 30-40 minutes at 350 degrees.

Ham and Cheese Squares

Ingredients

1 package Hawaiian Sweet Rolls
1/4 pound shaved ham (I like to fry it first)
8 ounces mozzarella, swiss or cheddar cheese
1 stick butter
1 tsp Worcestershire sauce
1 tsp Dijon mustard
onion powder to taste

Directions

Slice off top of rolls.  Place the ham and cheese on rolls left in tray.  Boil butter and remaining ingredients.  Pour half of butter mixture on top of the meat and cheese.  Place tops of rolls back on and brush with the rest of the butter mixture.  Bake approximately 15 minutes or until cheese is melted at 350 degrees.

Mock Apple Pie

When you taste this, you'll never believe it's not apple pie!

Ingredients

2  Pillsbury refrigerated pie crusts
36 Ritz crackers
2 cups water
2 cups sugar
2 tsp cream of tartar
2 tbsp lemon juice
2 tbsp butter
1/2 tsp cinnamon

Directions

Roll out one pie crust adn line a 9 inch pie plate.  Place crackers in prepared crust.  In a saucepan, heat water, sugar adn cream of tartar to a boil; simmer for 15 minutes.  Add lemon juice and cool.  Pour syrup over crackers.  Dot with butter and sprinkle with cinnamon.  Roll out second pie crust and place over pie.  Trim, seal and flute edges.  Slit top crust to allow steam to escape.  Bake at 425 degrees for 30-35 minutes or until crust is crisp and golden.  Serve with ice cream or whipped topping.

Impossible Bacon Pie

Ingredients

12 slices bacon, fried and crumbled
1 cup swiss cheese, shredded
2 cups milk
1 cup Bisquick
4 eggs
1/4 tsp salt
1/8 tsp pepper

Directions

Heat oven to 400 degrees.  Lightly grease pie plate.  Sprinkle bacon and cheese in plate.  Beat remaining ingredients until smooth.  Pour into pie plate.  Bake until knife inserted halfway between center and edge comes out clean, approximately 35 to 40 minutes.  Let stand for 5 minutes before serving.

Easy Chicken and Rice Bake

Ingredients

1 can cream of chicken soup
1 1/3 cup water
3/4 cup uncooked, regular white rice
1/2 tsp onion powder
1/4 tsp pepper
4 boneless, skinless chicken breast halves
1 cup cheddar cheese, shredded

Directions

Mix soup, water, rice, onion powder and pepper in a 2 quart shallow baking dish.  Top with chicken.  Sprinkle chicken with additional pepper.  Cover and bake at 375 degrees for 45 minutes or until chicken is no longer pink and rice is done.  Top with cheese.

Jeanne's Chili

Family Favorite! I usually double the recipe.

Ingredients

1 pound ground chuck
1 tsp onion powder
16 oz. tomatoe sauce
1 can tomatoe soup
1/2 cup water
1/2 tsp paprika
1/8 tsp cayenne pepper
1 bay leaf
3 whole cloves
1 1/2 tbsp chili powder (more to taste if desired)
1/8 tsp garlic powder
1 tsp salt
1 can spicy chili beans

Directions

Brown meat and drain.  Combine all ingredients except beans and stir well.  Cover and simmer over low heat for about one hour, stirring occasionally.  Add beans to mixture last 10 minutes and heat until begins to boil.  Remove bay leaves and cloves.  Can be served with sour cream and habanero or cheddar cheese.

Mom's Baked Beans

Ingredients

2 pounds pork and beans
2 tbsp vinegar
1/2 cup brown sugar
1/4 cup ketchup
1 tsp mustard
1 tbsp worcestershire sauce
3-4 bacon strips
onion powder to taste
I also add a little BBQ sauce


Mix all ingredients, add bacon strips to top.  Cover and bake for one hour at 350 degrees.

Breakfast Pizza

Ingredients

1  Pillsbury refrigerated pie crust
1/2 pound bacon, cooked and crumbled
8 oz. swiss cheese, shredded
4 eggs
12 oz. sour cream
2 Tbsp chopped parsley

Unroll pie crust and pat out to fit a 12 inch pizza pan.  Bake at 425 degrees for 5 minutes.  Sprinkle with bacon and cheese evenly over crust.  In a bowl, beat eggs, sour cream and parsley until smooth.  Pour over pizza.  Bake 20-25 minutes or until pizza is puffy and lightly browned.

Creamed Chicken and Biscuits

Ingredients

1 Tbsp diced onion
4 C cooked chicken
1 C sour cream
1 C cheddar cheese, shredded
8 frozen biscuits, thawed
1 1/2 Tsp butter
2 cans cream of chicken soup
1/2 cup milk

Directions

Preheat oven to 350 degrees.  Grease 9x13 baking dish.  Dice onion and heat butter over medium heat til melted.  Saute onion in butter until tender.  Combine onion, soup, sour cream, milk, and chicken ina medium bowl and mix well.  Spoon mixture into baking dish and bake for 15 minutes.  Sprinkle baked layer with 3/4 cup cheddar cheese.  Arrange the biscuits in a single layer over top.  Sprinkle with remaining cheese.  Bake until biscuits are golden brown and the sauce is bubble, about 20 minutes longer.

Cheesy Chicken Crescent Dish

My oldest son's favorite recipe ever! I usually double or triple this recipe.

Ingredients

1 3/4 cup shredded chicken
1 cup sharp cheddar cheese, shredded
1 tube crescent rolls
1 can cream of chicken soup
1/2 cup milk
Poultry seasoning, salt and pepper to taste

Directions

Preheat oven to 375 degrees.  Combine chicken, 1/2 cup cheese, poultry seasoning, salt and pepper.  Separate dough into 8 triangles.  Place approximately 3 tbsp. of chicken mixture on wide end of each triangle and roll to opposite end.  Bake cresents approximately 25 minutes, or until a golden brown.  In a medium saucepan, combine soup, cheese, milk and poultry seasoning.  Salt and pepper may be added desired. Heat until cheese melts. Spoon soup mixture over baked cresents.

Soy Sauce Marinade

Delicious marinade that really tenderizes and flavors steak.

Ingredients

1/2 cup soy sauce
1/2 cup water
2 tbsp lemon juice
1 tbsp brown sugar
2 tbsp vegetable oil
1/4 tsp hot pepper sauce
1 clove garlic, crushed
1/4 tsp pepper

Directions

Combine ingredients.  Use to marinade beef, pork, or chicken before grilling or broiling.  Makes 1 1/4 cups marinade.

Spaghetti Sauce

Very easy slow cooker recipe.

Ingredients

2 lbs ground chuck
14 oz tomatoe paste
15 oz tomatoe sauce
1/4 cup sugar
2 bay leaves
1 tsp garlic powder
1 tsp pepper
3 tbsp chili powder
1 tbsp vinegar
onion powder to taste

Directions

Dump all ingredients together, add enough water to rinse cans and stir.  Cook on low in a slow cooker for 6 hours.

Parmesan Knots

These go really fast, you may need to make more than one recipe.

Ingredients

1 cup vegetable oil
2 tsp garlic powder
1 tbsp oregano
1 tbsp parsley
1/2 cup parmesan cheese
3 cans Pillsbury buttermilk biscuits

Directions

Mix first 5 ingredients in a large ziplock bag and put off to the side.  Cut each biscuit into 3 strips.  Pull, roll, and tie each strip in a knot.  Bake as directed on biscuit package on a large cookie sheet sprayed with Pam.  As soon as they are out of the oven, pour them into the bag mixture.  Turn often.  Cool completely (I leave the bag open while they are cooling).  Once cool, turn bag to assure they are mixed well, then serve.  Makes 90.

Hot Fudge Sundae Cake

A rich hot fudge sauce forms while the cake bakes!

Ingredients

1 cup all purpose flour
3/4 cup sugar
2 tbsp baking cocoa
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
2 tbsp vegetable oil
1 tsp vanilla
1 cup chopped nuts, if desired
1 cup packed brown suga
1/4 cup baking cocoa
1 3/4 cup very hot water
Ice cream. If desired

Directions

Heat oven to 350 degrees. Mix flour, sugar, 2tbsp cocoa, baking powder and salt in an ungreased, square pan (9x9x2). Mix in milk, oil and vanilla with fork until smooth. Stir in nuts. Spread in pan. Sprinkle brown sugar and 1/4 cup cocoa over batter. Pour hot water over batter. Bake about 40 minutes until top is dry. Spoon warm cake into dessert dishes. Top with ice cream. Spoon sauce from pan onto each serving.

Crack Bread

Once you start eating this, you won't be able to stop!!!

Ingredients

1 unsliced loaf of sourdough bread (preferably round)
8-12 oz shredded sharp cheddar cheese
3 oz real bacon bits
1/2 cup butter, melted
1 tbsp ranch dressing mix

Directions

Use sharp knife to cut the bread going in both directions. Be careful not to cut through bottom crust. Sprinkle cheese and bacon bits between each cut, making sure to get between all cuts. Mix together butter and ranch dressing mix. Pour over bread. Wrap loaf in foil and place on baking sheet. Bake at 350 degrees for 15 minutes. Unwrap and bake an additional 10 minutes or until cheese is melted.
